VIDEO: Roast guinea pig is a different kind of delicacy

PT’s Coffee Roasting Co. founder Jeff Taylor approached his first experience eating a popular and traditional Colombian dish, cuy, with trepidation last year.

Although he’s made multiple trips to Colombia and his wife, Maritza Taylor, is a native, Taylor hadn’t previously tried cuy, which is a breed of large guinea pig. It is roasted on a spit much like a pig in the United States, and Taylor admitted, “The thing that was most disturbing was having it sit on the table looking at you.”

Taylor described the meat as a dark meat that was more oily or greasy than chicken or pork.
